Banoffe Brownie

Ingredients to make a Banoffe Brownie

  • 1000g Middleton Fudge Brownie Mix
  • (5) 500g Bananas


  • Icing Sugar (to desired thickness)
  • 1 Banana
  • Salted Caramel Sauce (to drizzle)
  1. Add bananas to the mixing bowl and turn on low speed (allow bananas to mush into liquid)
  2. Add the dry brownie mix to the bowl and mix on low speed for one minute
  3. Scrape down sides of bowl and mix for a further one minute on medium speed
  4. Again scrape down sides of bowl and mix for a final one minute on slow speed
  5. Place mix into the baking tin and bake at 190°C / 400°F / Gas Mark 5 for approximately 30-35 minutes (cooking times may vary depending on oven)
  6. Set cooked brownie to one side and allow to cool
  7. Place left over banana in mixing bowl and mush with fork until a liquid. Add icing sugar until desired thickness and able to cover the brownie
  8. Spread the icing sugar over the brownie and top with salted caramel sauce to decorate.
