Cheese & Chive Scone

Ingredients to make 13 scones

  • 500g Middleton Gluten Free Scone Mix
  • 130g Butter (softened)
  • 170ml Milk
  • 2 Eggs
  • 100g Grated Cheese
  • 4tsp Fresh Chive Method
  1. Place the weighed out scone mix into a mixing bowl
  2. Add the softened butter to the scone mix and mix on slow speed until it resembles fine breadcrumbs
  3. Add the chopped chives and cheese to the mix
  4. Mix together for a few seconds or until evenly distributed
  5. Add the milk and egg together in a jug and add to the scone mix
  6. Mix on slow speed for one minute or until a dough is formed
  7. Roll out dough to approximately ¾” thick and then cut with the desired cutter
  8. Collect trimmings and repeat
  9. Place onto a greased or lined baking tray and brush with an egg wash. Sprinkle with a little extra grated cheese
  10. All the scones to rest for 15 minutes before baking
  11. Bake in a pre-heated oven at 220°C / 425°F / Gas Mark 6 for 10-15 minutes until risen and golden brown
