Caribbean sponge

Gluten Free Caribbean Sponge

Ingredients to make one tray bake (10″ x 8″ tray)

  • 370g Middleton Gluten Free Plain Sponge Mix
  • 175g Butter (softened)
  • 3 Eggs
  • 75g Milk
  • 2 Bananas (mashed)
  • 125g Pineapple (chopped)
  • One Orange Zest & juice
  • Icing Sugar (decoration)

Method

  1. Place the weighed out mix into a mixing bowl
  2. Select the beater attachment
  3. Add the softened butter, egg, milk, orange juice / zest and banana to the mix
  4. Mix on slow speed for one minute
  5. Scrape down and mix for a further 2 minutes on a medium speed or until smooth
  6. Add the chopped pineapple to the mix and mix on slow speed until well incorporated
  7. Pour the mixture into a lined baking tray and bake at 190°C / Gas mark 5 for 20-25 minutes
  8. Remove sponge from tin and place on wire rack to cool
  9. Cooking times and temperatures may vary depending on oven
  • Optional: decorate with icing sugar for an extra treat
