Gluten Free Chocolate Orange Cookie

Ingredients to make gluten free Chocolate Orange Cookies

  • 500g Middleton’s Gluten Free Chocolate Cookie Mix
  • 150g Butter (softened)
  • 1 Egg
  • 2tsp Orange Extract
  • 2tsp Orange Zest (1 orange)
  • 312g Tinned Mandarins (drained)
  1.  Add the dry mix to the bowl
  2. Select the beater attachment
  3. Add the butter to the dry mix and mix on slow speed until it resembles fine breadcrumbs
  4. Add the orange zest and extract to the mixture and mix until well incorporated
  5. Add the egg and mix on slow speed for 50 seconds
  6. Just before mix starts to form into a dough add the tinned mandarins and mix for 10 seconds
  7. Using a 50mm (size 16) ice cream scoop, portion one scoop of dough per cookie onto a baking tray
  8. Flatten each cookie slightly, (allow plenty of space between cookies as the will spread out when baking)
  9. Bake in the centre of a pre-heated oven at 200°C / Gas Mark 6 for 10-12 minutes, (adjust temperature and baking time depending on oven)
  10. Allow to cool on baking tray before moving onto a wire rack to cool fully
