Gluten Free Courgette Chocolate Muffin

Ingredients to make 8 muffins

  • 500g Middleton Gluten Free Chocolate Muffin Mix
  • 120g Oil
  • 2 Eggs
  • 235g Courgette (grated)

Method

  1. Place the weighed out mix into a mixing bowl
  2. Select beater attachment
  3. In a separate container mix the oil and eggs together
  4. Place the grated courgette into a clean tea towel and squeeze any excess liquid out
  5. Add the liquids to the dry mix along with the grated courgette and mix on slow speed for one minute
  6. Scrape down and mix for a further 3 minutes on medium speed
  7. Scale muffins at 65g into muffin cases
  8. Place the muffins into the oven and bake at 200°C / Gas Mark 6 for 25-30 minutes
  9. Cooking times and temperature may vary depending on oven
