Gluten Free Frozen Forest Fruit Muffin

Ingredients to make 8 muffins

  • 500g Middleton Gluten Free Chocolate Muffin Mix
  • 120g Oil
  • 2 Eggs
  • 235g Frozen Forest Fruits

Method

  1. Place the weighed out mix into a mixing bowl
  2. Select beater attachment
  3. In a separate container mix the oil and eggs together
  4. Add the liquids to the dry mix and mix on slow speed for one minute
  5. Scrape down and mix for a further 3 minutes on medium speed
  6. Add the Frozen Forest Fruits to the mixture and mix on slow speed until well incorporated
  7. Scale muffins at 65g into muffin cases
  8. Place the muffins into the oven and bake at 200°C / Gas Mark 6 for 25-30 minutes
  9. Cooking times and temperature may vary depending on oven
