Ingredients to make 8 muffins
500g Middleton Gluten Free Plain Muffin Mix
120g Oil 2 Eggs 20g Water
140g Banana (mashed)
2tsp Orange Zest
50g Pineapple (chopped)
35g Pineapple (chopped)
Method
- Place the weighed out mix into a mixing bowl
- Select the beater attachment
- In a separate container mix the oil, eggs, water and the orange zest
- Add the liquids to the dry mix and mix on slow speed for one minute
- Scrape down and mix for a further 3 minutes on medium speed
- Add the banana and 50g of pineapple to the mixture and mix on slow speed until well incorporated
- Scale muffins at 65g into muffin cases
- Sprinkle the remaining pineapple onto the muffins
- Place the muffins into the oven and bake at 200°C / Gas Mark 6 for 25-30 minutes
