Gluten Free Caribbean Muffin

Ingredients to make 8 muffins

500g Middleton Gluten Free Plain Muffin Mix

120g Oil 2 Eggs 20g Water

140g Banana (mashed)

2tsp Orange Zest

50g Pineapple (chopped)

35g Pineapple (chopped)


  1. Place the weighed out mix into a mixing bowl
  2. Select the beater attachment
  3. In a separate container mix the oil, eggs, water and the orange zest
  4. Add the liquids to the dry mix and mix on slow speed for one minute
  5. Scrape down and mix for a further 3 minutes on medium speed
  6. Add the banana and 50g of pineapple to the mixture and mix on slow speed until well incorporated
  7. Scale muffins at 65g into muffin cases
  8. Sprinkle the remaining pineapple onto the muffins
  9. Place the muffins into the oven and bake at 200°C / Gas Mark 6 for 25-30 minutes
  10. Cooking times and temperatures may vary depending on oven
