Gluten Free Chocolate & Courgette Sponge

Ingredients to make one tray bake (10″ x 8″ tray)

  • 370g Middleton Gluten Free Plain Sponge Mix
  • 175g Butter (softened)
  • 3 Eggs
  • 75g Milk
  • 43g Cocoa 300g Courgette (grated)


  1. Place the weighed out mix into a mixing bowl
  2. Select the beater attachment
  3. Add the cocoa to the mix on slow until well incorporated
  4. Add the softened butter, egg, milk and courgette to the mix
  5. Mix on slow speed for one minute
  6. Scrape down and mix for a further 2 minutes on a medium speed or until smooth
  7. Pour the mixture into a lined baking tray and bake at 190°C / Gas Mark 5 for 20-25 minutes
  8. Remove sponge from tin and place on wire rack to cool
  9. Cooking times and temperatures may vary depending on oven
