Gluten Free Peach & Raspberry Muffin

Ingredients to make 8 muffins

  • 500g Middleton Gluten Free Plain Muffin Mix
  • 120g Oil
  • 2 Eggs
  • 185g Peach (blitzed)
  • 50g Raspberries (chopped)


  1. Place the weighed out mix into a bowl
  2. Select the beater attachment
  3. In a separate container mix the oil, eggs and peach together
  4. Add the liquids to the dry mix and mix on slow speed for one minute
  5. Scrape down and mix for a further 3 minutes on medium speed
  6. Add the raspberries to the mixture and mix on slow speed until well incorporated
  7. Scale the muffins at 65g into muffin cases
  8. Place muffins into the oven and bake at 200°C / Gas Mark 6 for 25-30 minutes
  9. Cooking times and temperatures may vary depending on oven
