Gluten Free Pineapple & Coconut Cookie

Ingredients to make 12 cookies

  • 500g Middleton Gluten Free Plain Cookie Mix
  • 150g Butter (softened)
  • 1 Egg
  • 177g Pineapple (chopped)
  • 177g Desiccated Coconut


  1. Add the dry mix to the bowl
  2. Select the beater attachment
  3. Add the butter and mix on slow speed until it resembles fine breadcrumbs
  4. Add the desiccated coconut and mix until well incorporated
  5. Add the pineapple and egg and mix on slow speed for one minute
  6. Using a 50mm (size 16) ice cream scoop, portion one scoop of dough per cookie onto a baking tray
  7. Flatten each cookie slightly, (allow plenty of space between cookies to spread out when baking)
  8. Bake in the centre of a pre-heated oven at 200°C / Gas Mark 6 for 10-12 minutes, (adjust temperature and baking time depending on oven)
  9. Allow to cool on a baking tray before moving onto a wire rack to cool fully
