Ingredients to make 12 cookies
- 500g Middleton Gluten Free Plain Cookie Mix
- 150g Butter (softened)
- 1 Egg
- 177g Pineapple (chopped)
- 177g Desiccated Coconut
Method
- Add the dry mix to the bowl
- Select the beater attachment
- Add the butter and mix on slow speed until it resembles fine breadcrumbs
- Add the desiccated coconut and mix until well incorporated
- Add the pineapple and egg and mix on slow speed for one minute
- Using a 50mm (size 16) ice cream scoop, portion one scoop of dough per cookie onto a baking tray
- Flatten each cookie slightly, (allow plenty of space between cookies to spread out when baking)
- Bake in the centre of a pre-heated oven at 200°C / Gas Mark 6 for 10-12 minutes, (adjust temperature and baking time depending on oven)
- Allow to cool on a baking tray before moving onto a wire rack to cool fully
