Gluten Free Raspberry Brownie

Ingredients to make one tray bake (10″x 8″ tray)

  • 500g Middleton Gluten Free Fudge Brownie Mix
  • 165g Butter (melted)
  • 4 Eggs
  • 433g Raspberries


  1. Place the weighed out mix into a mixing bowl
  2. Select beater attachment
  3. Add the eggs to the dry mix and blend for one minute on slow speed
  4. Scrape down and add the melted butter
  5. Mix on slow speed for one minute
  6. Scrape down again and mix on medium speed for one minute
  7. Add the raspberries to the mixture and mix on slow speed until well incorporated
  8. Add mixture to baking tray and bake at 190°C / Gas Mark 5 for 40 minutes
  9. Cooking times and temperature may vary depending on tin sizes used and oven
