Rocky Road Brownie

Ingredients to make a Rocky Road Brownie

  • 1000g Middleton Fudge Brownie Mix
  • 170g Water
  • 5 Digestive Biscuits
  • 150g Raisins
  • 133g Unsalted Butter
  • 400g Milk Chocolate
  • 4 tbs Golden Syrup
  • 75g Mini Marshmallows
  • 113g Maltesers
  1. Add dry mix to the bowl
  2. Add the water and the raisins to the dry mix and beat on slow speed for one minute
  3. Scrape down side of the bowl and beat for a further one minute on medium speed
  4. Scrape down side again and mix on slow speed for one minute
  5. Break digestive biscuits in to small pieces and add to the dry mix and fold in by hand
  6. Place mix in to the baking tin and bake at 190°C / 400°F / Gas Mark 5 for approximately 30-35 minutes (cooking times may vary depending on oven)
  7. Once brownie is cooked set to one side and allow to cool
  8. In another bowl add the butter, milk chocolate and golden syrup and melt together
  9. Cool the chocolate for 10-15 minutes then stir in the marshmallows and Maltesers (make sure that chocolate is cool as marshmallow will melt)
  10. Spoon the chocolate mix onto the brownie mix and lightly spread to cover it completely
  11. Leave it to set in a cool place.
