Ingredients to make a Rocky Road Brownie
- 1000g Middleton Fudge Brownie Mix
- 170g Water
- 5 Digestive Biscuits
- 150g Raisins
- 133g Unsalted Butter
- 400g Milk Chocolate
- 4 tbs Golden Syrup
- 75g Mini Marshmallows
- 113g Maltesers
- Add dry mix to the bowl
- Add the water and the raisins to the dry mix and beat on slow speed for one minute
- Scrape down side of the bowl and beat for a further one minute on medium speed
- Scrape down side again and mix on slow speed for one minute
- Break digestive biscuits in to small pieces and add to the dry mix and fold in by hand
- Place mix in to the baking tin and bake at 190°C / 400°F / Gas Mark 5 for approximately 30-35 minutes (cooking times may vary depending on oven)
- Once brownie is cooked set to one side and allow to cool
- In another bowl add the butter, milk chocolate and golden syrup and melt together
- Cool the chocolate for 10-15 minutes then stir in the marshmallows and Maltesers (make sure that chocolate is cool as marshmallow will melt)
- Spoon the chocolate mix onto the brownie mix and lightly spread to cover it completely
- Leave it to set in a cool place.
