Texas BBQ Pork Ribs with Pomegranate Salsa

Ingredients

1kg Pork ribs – (pre-cut into ribs)

100g Middleton Texas Barbecue Glaze

 

Pomegranate Salsa

1 Red onion – (finely chopped)

250g Pomegranate seeds

1 Red Chilli – (finely chopped)

2 Limes – (juiced)

½ Bunch coriander – (roughly chopped)

Method

  1. In a bowl, add pork ribs and Middleton’s Texas Barbecue Glaze, rub onto ribs until all covered, cling film and place in fridge for 15 minutes.
  2. Prepare Pomegranate salsa ingredients and place in a ramekin to serve.
  3. Place marinated ribs in a roasting pan, cover with foil, and bake for 1 hour 15 mins (or up to 3 hours at a lower 160°C for more tender meat).
  4. To finish, remove foil, baste with the juices, and cook uncovered for final 15-20 mins until sticky
  5. Serve on a plate with pomegranate salsa and enjoy.

Chef’s Tip:

Try serving with either – apple cider vinegar slaw (cuts through richness of the ribs), BBQ Beans, Corn Bread, Corn On Cob or Mac & Cheese
