VEGAN GREEK STYLE KOFTAS

METHOD

 

STEP 1

Weigh out vegan burger mix into a mixing bowl.

STEP 2

Add oregano to dry mix in mixing bowl.

STEP 3

Measure the water and oil into a jug and pour into mixing bowl.

STEP 4

Mix together until combined.

STEP 5

Form and roll out mix and divide into 10 “sausage shape” portions.

STEP 6

Place on a lined baking tray and put in oven at 1800c or gas mark 4, for 10 minutes.

STEP 7

While kofta’s are cooking, dice & chop spring onion, red onion, cucumber, and tomato. Add lime juice and mix together. Finely chop mint and mix with yoghurt.

STEP 8

Serve kofta once cooked in a flatbread, add salsa and coriander mayo.

  • 327ml Water
  • 118ml Oil
  • 2g Oregano
  • 3 x Tomatos (Quartered)
  • 1 x Finely Chopped Spring Onion
  • 1 x Diced Red Onion
  • 1 x Diced Cucumber
  • 2 x Limes (Lime Juice)
  • 1/2 Fresh Bunch of Mint (Finely Chopped)
  • 250g Yogurt
