These oven-baked BBQ beans are a proper comfort dish with a more modern edge. Built on a base of softened onion, red pepper and garlic, the sauce gets its depth from smoked paprika, a touch of chipotle, and a hit of apple cider vinegar for balance. Middleton Premium Plus BBQ Marinade does the heavy lifting, bringing a rich barbecue flavour that turns the beans glossy, thick and syrupy as they bake.

  • 1 Onion, diced
  • 2 tbsp olive oil
  • 1 Red pepper, diced
  • 2 Garlic cloves, minced
  • 1 tbsp Smoked paprika
  • ¼ to ½ tsp Chipotle paste
  • ¼ tsp Salt
  • ¼ tsp Freshly cracked black pepper
  • 2 tbsp Apple cider vinegar
  • 100g Middleton Premium Plus BBQ Marinade
  • 150g Tomato sauce
  • 1 tbsp Dijon mustard
  • 1 tbsp Brown sugar
  • 3 x 400g (14 oz) can of cans baked beans
  • 500ml Water
  • 2 Bay leaves

METHOD

Method

  • Preheat the oven to 200 C.
  • Heat a large thick bottom pan, add the olive oil over a medium-low heat and add the onion, pepper and garlic. Cook, stirring often, until everything softens, for about 5 minutes. Stir in the paprika, chili powder, salt and pepper. Cook for 1 to 2 minutes. Stir in the vinegar, Middleton Premium Plus BBQ Marinade, tomato sauce, mustard and brown sugar until combined.
  • Stir in the baked beans directly from the can. Bring the mixture to a boil, then turn off the heat.
  • Place into the oven and bake for 30 to 35 minutes, or until bubbly and syrupy. Remove and let cool slightly before serving.
