BBQ Chicken Slider with Remoulade Mayonnaise and Slaw

These BBQ chicken sliders are a bold and flavour-packed option for any menu. Tender chicken thighs glazed in Middleton’s Premium Plus BBQ marinade are paired with a crunchy slaw and a rich remoulade mayonnaise, all served in soft brioche buns. Ideal for caterers and street food-style menus, this recipe delivers a satisfying bite with every mouthful.

Ingredients
  • Premium Plus BBQ Glaze Mix
  • 10 x Small boneless chicken thighs (approximately 1kg)
  • 100g Middleton’s Premium Plus BBQ Glaze
  • 20ml Water or oil – whichever you prefer
  • 10 x Brioche buns
Slaw Mix
  • 200g White cabbage – finely sliced
  • 200g Red cabbage – finely sliced
  • 1 x Small red onion – finely sliced
  • 1 x tbsp Apple cider vinegar
  • 1 x tbsp Maple syrup
  • 2 x tsp Dijon mustard
  • Cracked black pepper – to season
  Remoulade Mayonnaise
  • 220g Mayonnaise
  • 2g lemon juice
  • 15g Whole grain mustard
  • 5g Djon mustard
  • 12g Chilli sauce
  • 10g Tomato ketchup
  • 1 Garlic clove – (Minced, approx. 2g)
  • 2 Sprigs freshly chopped parsley leaves
  • 5g Onion – (minced)
  • 3g Green pepper – (minced)
  • 2g Smoked Paprika
  • Salt, cracked black pepper & cayenne pepper to taste.

Middleton’s Premium Plus BBQ Glaze

METHOD

Method

  • Place chicken thighs into a clean mixing bowl.
  • Add the BBQ glaze and oil or water. (whichever you prefer).
  • Mix all together until all the chicken is coated.
  • Cling film and leave in the fridge for 2 hours or ideally overnight to marinate.
  • Once marinaded, place chicken on a lined oven tray and cook at 160C for30 minutes or until chicken has a core temp of 75°C or above.
  • Once chicken has cooked, set aside.

Remoulade Mayonnaise

Make the slaw mix by adding all the prepped ingredients into a bowl and mix well, then add the required amount of pepper to season, mix thoroughly

Burger Build

Spread the Remoulade Mayonnaise onto the brioche base and lid, layer from bottom up with the BBQ Chicken thigh and top with slaw.
