Baked until golden and juicy, then finished with a fiery drizzle of buffalo sauce, crispy onions, spring onions, coriander, and fresh red chilli slices — this recipe is ideal for caterers or foodservice operators looking to serve crowd-pleasing, American-inspired street food with a twist.

  • 1.350kg Chicken wings – 3 x wings per serving
  • 135g Middleton’s Premium Plus BBQ Glaze
  • 2 Bunches of spring onions, chopped
  • 40g Crispy onions
  • 150g Buffalo sauce
  • 4 Red chilies, finely sliced
  • Bunch coriander, roughly chopped

METHOD

Method

Mesquite Chicken Wings

  • Rinse the chicken wings and pat dry.
  • In a large mixing bowl, add the chicken wings followed by the BBQ glaze and rub into the chicken for an even coating, add a touch of water if needed to help pick up.
  • Cover and leave to marinate in the fridge for 2 hours, or ideally overnight.

To Cook the Wings

  • Preheat the oven to 180°C
  • Once marinated, place chicken on a lined oven tray and cook at 180°C for 30 minutes or until chicken has a core temp of 75°C or above.
  • Remove the wings from the oven and set one side.

To Assemble

  • Place 3 Mesquite BBQ wings in a tray, drizzle the buffalo sauce over each, followed by the spring onions, crispy onions, coriander and top with chilies.
