Method
Mesquite Chicken Wings
- Rinse the chicken wings and pat dry.
- In a large mixing bowl, add the chicken wings followed by the BBQ glaze and rub into the chicken for an even coating, add a touch of water if needed to help pick up.
- Cover and leave to marinate in the fridge for 2 hours, or ideally overnight.
To Cook the Wings
- Preheat the oven to 180°C
- Once marinated, place chicken on a lined oven tray and cook at 180°C for 30 minutes or until chicken has a core temp of 75°C or above.
- Remove the wings from the oven and set one side.
To Assemble
- Place 3 Mesquite BBQ wings in a tray, drizzle the buffalo sauce over each, followed by the spring onions, crispy onions, coriander and top with chilies.
