These Caramel Sticky Date Cookies are soft, chewy, and full of rich flavour from chopped dates, oats, and cinnamon. Created using Middleton’s reduced sugar Plain Cookie Mix, they’re a perfect lower sugar treat for school menus, college canteens, and busy catering environments. A simple and satisfying bake that’s easy to prepare and store.

  • 450g Middleton’s Plain Cookie Mix
  • 50ml Water
  • 200g Pitted fresh dates (about 15 dates) – chopped
  • 50g Rolled Oats
  • 1 tsp Ground cinnamon
  • 1 tsp Vanilla extract

METHOD

Method

  • Preheat oven to 180°C.
  • Place the Middleton’s Plain Cookie Mix, chopped dates, rolled oats, cinnamon and vanilla in a bowl and mix to combine.
  • Add the water and using a beater attachment, mix at a slow speed until it forms a dough.
  • Divide the mixture into 25g portions and roll into balls, flatten slightly and place on baking trays lined with non-stick baking paper. Bake for 10 – 12 minutes or until golden.
  • Allow to cool slightly on trays before transferring to wire racks to cool completely. Store cookies in an airtight container for up to 1 week.
