Method
- Pre-heat oven to 180oC.
- Weigh out 1kg Middleton’s Chocolate Muffin Mix into a mixing bowl and add 80g desiccated coconut, 2 teaspoons of vanilla extract, 800g mashed banana, 180ml of oil and 300g dark chocolate.
- Mix for 1 minute on slow speed.
- Scrape down and mix for 1 minute on medium speed.
- Scale into muffin cases at 85g each.
- Bake in the oven for 20-22 minutes, check with a skewer, bake for longer if needed until skewer comes out clean.
- Leave to cool, dust with icing sugar and serve.
