Packed with mashed banana, dark chocolate and desiccated coconut, they make a wholesome treat that doesn’t compromise on taste.

  • 1kg Middleton’s Chocolate Muffin Mix
  • 180ml Oil
  • 80g Desiccated Coconut
  • 2 Teaspoons Vanilla Extract
  • 800g Banana – mashed
  • 300g Dark Chocolate – roughly chopped
  • Icing Sugar – for dusting

METHOD

Method

  • Pre-heat oven to 180oC.
  • Weigh out 1kg Middleton’s Chocolate Muffin Mix into a mixing bowl and add 80g desiccated coconut, 2 teaspoons of vanilla extract, 800g mashed banana, 180ml of oil and 300g dark chocolate.
  • Mix for 1 minute on slow speed.
  • Scrape down and mix for 1 minute on medium speed.
  • Scale into muffin cases at 85g each.
  • Bake in the oven for 20-22 minutes, check with a skewer, bake for longer if needed until skewer comes out clean.
  • Leave to cool, dust with icing sugar and serve.

Cooking times and temperature may vary depending on type of oven used.
