METHOD
STEP 1
In approx. x12 small dessert glasses, put plain sponge in the base of each glass – approx. 2cm thick.
STEP 2
Next pour jelly into each glass as equal as possible and leave in the fridge to set.
STEP 3
Once jelly has set, using a mixer make up mousse and add the orange zest to the mix, then decant roughly 50g into each glass or so each glass is filled to the top as in the picture.
STEP 4
Top each mousse with chocolate shavings if desire.
STEP 5
Place in the fridge for 15 minutes to set.
STEP 6
Serve as required.
