METHOD
STEP 1
Weigh out chocolate muffin mix into a mixing bowl and use the beater attachment.
STEP 2
Measure out the water and oil together in a jug and pour into mixing bowl
STEP 3
Mix on slow speed for 1 minute.
STEP 4
Scrape down and mix for 2 minutes on medium speed.
STEP 5
Scrape down a 2nd time and mix for 1 minute on slow speed.
STEP 6
Scale into muffin cases at approx. 65g each.
STEP 7
Bake in oven at 180oc for 25 minutes.
STEP 8
Leave on a cooling rack once cooked.
STEP 9
While muffins are cooling, in a bowl add chocolate frosting and a few drops of black food colouring gel. If desire a darker frosting add more colouring gel as required.
STEP 10
Put frosting into a piping bag and when muffins are cool, pipe on to each muffin.
STEP 11
Sprinkle red decorating drops evenly over each muffin.
STEP 12
Place in fridge to chill for 10 – 15 minutes to set frosting.
STEP 13
Serve as required.
