FLAPJACK MUFFINS

METHOD

 

STEP 1

Weigh out dry mix into a mixing bowl.

STEP 2

Mix the Oil and Water together and add ¾ of the mixture to the dry mix.

STEP 3

Mix on slow speed for 1 minute

STEP 4

Scrape down side of the bowl and add the remaining Oil and Water to the mixture and beat for a further 1 minute on slow speed.

STEP 5

Scrape down side again and mix on medium speed for 2 minutes.

STEP 6

Scrape down mixture again and mix on slow speed for 1 minute.

STEP 7

Scale mixture to 65g-80g into a muffin case and top each muffin with flapjack.

STEP 8

Bake at 190c / 400F / Gas Mark 5 for approximately 25 minutes

STEP 9

When muffins are still warm Inject Strawberry Jam into centre of muffin and allow to cool.

STEP 10

Drizzle white chocolate over each muffin.

Cooking times and temperatures may vary depending on oven used

  • 200g Flapjack (Topping)
  • 340g Strawberry Jam
  • 150ml White Chocolate (Melted)
