  • 500g Middleton’s Plain Cookie Mix
  • 90ml Water
  • 250g Rolled oats
  • 125g Crystallised ginger – finely chopped
  • ¼ tsp Allspice
  • 50g Honey
  • 1 teaspoon bicarbonate of soda

METHOD

Method

  • Preheat oven to 180°C.
  • Place the Middleton’s Cookie Mix, oats, ginger, honey and allspice in a bowl and mix to combine.
  • Add the water and using a beater attachment, mix at a slow speed until it forms a dough.
  • Roll the mixture into 25g balls and place onto baking trays lined with non-stick baking paper. Flatten slightly, allowing room to spread.
  • Bake for 10 – 12 minutes or until deep golden. Allow to cool slightly on trays before transferring to wire racks to cool completely.
