GLUTEN FREE BREADED CHICKEN STRIPS SERVED IN A FLATBREAD

METHOD

 

STEP 1

Slice chicken breast into strips and place in a plastic bowl or container.

STEP 2

Make up Premium plus batter mix in a separate bowl so consistency resembles single cream. Add chicken to batter mix. Make sure chicken has an even coating.

STEP 3

Weigh out gluten free original breading in another separate bowl.

STEP 4

Add chicken and fold into breading until chicken is completely coated.

STEP 5

Place chicken on a lined oven tray, lightly spray with oil and cook at 180c – 200c for 20 minutes..

STEP 6

While chicken is cooking cook bacon lardons and chop salad, leave to one side.

STEP 7

Serve chicken in a flatbread (50/50 bread mix) with bacon salad and coriander mayonnaise.

  • 100g Cooked Bacon Lardons
  • 1 x Chopped Spring Onion
  • Finely Chopped Lettuce Leaves (As Required)
  • 3 x Tomatos (Quartered)
  • 1 x Diced Cucumber
