GLUTEN FREE LEMON AND POPPY SEED MUFFINS

METHOD

 

STEP 1

Weigh out muffin mix into a mixing bowl and select the beater attachment.

STEP 2

Measure out eggs, water and oil in a jug.

STEP 3

Add vanilla extract and lemon extract to mix in mixing bowl and then add water.

STEP 4

Mix for 1 minute on slow speed.

STEP 5

Scrape down and mix for a further 3 minutes on medium speed.

STEP 6

Add poppy seeds to mixture a fold in on slow speed for 10 seconds.

STEP 7

Scale into muffin cases at 65 – 70g each.

STEP 8

Bake at 180oC for 25 minutes.

 

Cooking times and temperatures may vary depending on type of oven used.

  • 60ml Water
  • 240ml Oil
  • 4 x Eggs
  • 1 tsp Vanilla Extract
  • 5 tsp Lemon Extract
