Method
- Weigh out Middleton’s muffin mix into mixing bowl and add lemon zest.
- Mix oil, water in a jug until just combined and then pour ¾ into the bowl.
- Mix on slow speed for one minute and then scrape down.
- Add in the remaining oil and beat for a further minute on slow speed.
- Beat on medium speed for 2 minutes.
- Scrape down and beat for 1 minute on slow speed.
- Fold the Blueberries in by hand.
- Scale at 65g into muffin cases in a tin.
- Bake for 25 – 26 minutes at 180o C. Baking times may vary depending on type of oven used.
