  • 1kg – Middleton’s Plain Muffin Mix
  • 400ml – Water
  • 300ml – Oil
  • 250g – Blueberries
  • x3 Lemon zested

METHOD

Method

  • Weigh out Middleton’s muffin mix into mixing bowl and add lemon zest.
  • Mix oil, water in a jug until just combined and then pour ¾ into the bowl.
  • Mix on slow speed for one minute and then scrape down.
  • Add in the remaining oil and beat for a further minute on slow speed.
  • Beat on medium speed for 2 minutes.
  • Scrape down and beat for 1 minute on slow speed.
  • Fold the Blueberries in by hand.
  • Scale at 65g into muffin cases in a tin.
  • Bake for 25 – 26 minutes at 180o C. Baking times may vary depending on type of oven used.
