Ready in just 10 minutes.

  • 500g Middleton’s Chocolate Cookie Mix
  • 130g Fresh or frozen raspberries – (don’t defrost if frozen)
  • 60g Dark chocolate pieces – roughly chopped

METHOD

Method

  • Preheat oven to 180°C.
  • Place 500g of the Middleton’s Chocolate Cookie Mix into a bowl.
  • Add 130g of raspberries and using a beater attachment, mix at a slow speed until it forms a dough. You may need to add a touch of water.
  • To portion, divide into 50g portions, roll into balls and place onto a lined baking tray, slightly flatten.
  • Press the chopped chocolate pieces on top of each cookie.
  • Bake cookies for 10-12 mins at 180°C (Cooking times and temperature may vary depending on type of oven used)
  • Allow to cool slightly on trays before transferring to wire racks to cool completely.


Chef tip

Press fresh raspberries into the top of each cookie before baking.
