Method
- Weigh out muffin mix into a mixing bowl.
- Mix oil, water and chopped peaches in a jug until just combined. Pour ¾ of the mixture into the mixing bowl.
- Mix on slow speed for 1 minute and then scrape down.
- Add the remaining mixture of oil and peaches and beat for a further 1 minute on slow speed.
- Beat on medium speed for 2 minutes.
- Scrape down and beat for a further 1 minute on slow speed.
- Fold in 200g total of raspberries by hand for 10 seconds.
- Scale at 65g each into muffin cases.
- Bake for 25 – 26 minutes at 180oc.
