Weigh out carrot cake mix into a mixing bowl and select the beater
Measure out the water and oil in a jug and add to mixing bowl and mix for 1 minute on slow speed.
Scrape down and mix for a further 3 minutes on medium speed.
Add grated carrot and mix for 10-20 seconds to incorporate into mix.
Scrape mix into a lined and greased 10” round cake tin.
Bake in the oven at 160 o C for 50 minutes.
Leave to cool on a wire rack.
When cooled down add the vanilla frosting and spread evenly covering the cake.
Next add the icing carrots where desired for decoration.
Cooking times and temperatures may vary depending on type of oven used.
