This vibrant flatbread pizza features tender chicken marinated in Middleton’s Mediterranean marinade, baked to perfection and layered with rich tomato sauce, creamy mozzarella, black olives, and a fresh rocket finish. Bursting with flavour and easy to prepare, it’s a delicious twist on pizza night with a sunny Mediterranean vibe.

  • 10x Flame Baked Flatbreads
  • 500g Pizza sauce
  • 700g Chicken breast – cut into slices
  • 45g Middleton’s Premium Plus Mediterranean Marinade
  • 20g Olive oil
  • 800g Buffalo mozzarella – torn
  • 200g Black olives
  • 80g Wild rocket

METHOD

Method For the Mediterranean Chicken

  • Place chicken into a mixing bowl.
  • Add the Middleton’s Mediterranean marinade and olive oil.
  • Mix all together until all the chicken is coated.
  • Cling film and leave in the fridge for 15 minutes to chicken to marinate or marinade overnight.
  • After 15 minutes place chicken on a lined oven tray and cook at 200°C for 15 – 20 minutes or until chicken has a core temp of 75°C or above.
  • Once chicken has cooked, set aside.

Building the Pizza

  • Spread each flatbread with the tomato sauce.
  • Top with mozzarella cheese.
  • Add the Mediterranean chicken and olives.
  • Bake at a high temperature for about 15 minutes or until lightly browned.
  • Finish with the wild rocket and serve.

Chefs Tip:

The Mediterranean marinade works beautifully with chicken wraps or as a chicken protein bowl.

Try adding some Sunblush tomatoes for an extra Mediterranean boost.
