  • 1kg – Middleton Plain Muffin Mix
  • 400ml – Water
  • 300ml – Oil
  • 300g – Peaches – finely chopped
  • 200g – Raspberries

METHOD

Method

  • Weigh out muffin mix into a mixing bowl.
  • Mix oil, water and chopped peaches in a jug until just combined. Pour ¾ of the mixture into the mixing bowl.
  • Mix on slow speed for 1 minute and then scrape down.
  • Add the remaining mixture of oil and peaches and beat for a further 1 minute on slow speed.
  • Beat on medium speed for 2 minutes.
  • Scrape down and beat for a further 1 minute on slow speed.
  • Fold in 200g total of raspberries by hand for 10 seconds.
  • Scale at 65g each into muffin cases.
  • Bake for 25 – 26 minutes at 180oc.
