Carrot Cake

Ingredients to make 28 x 52g (1kg) and 14 x 52g (500g) portions using Middleton Foods Plain Sponge Mix

  • 1kg Dry Mix / 500ml Water / 2 Whole Grated Carrots / 2 tsp Mixed Spice / 2 tsp Black Treacle
  • 500g Dry Mix / 250ml Water / 1 Whole Grated Carrot / 1 tsp Mixed Sprice / 1 tsp Black Treacle

Method for Plain Sponge Mix

  1. Weigh out mix into a mixing bowl and add grated carrot, mixed spice and black treacle to mixing bowl.
  2. Measure out water and add to mixing bowl, beat for 1 minute on slow speed.
  3. Scrape down and beat for a further 4 minutes on medium speed.
  4. Pour mix into a lined gastro tin and spread evenly.

Ingredients to make 32 x 52g (1kg) and 16 x 52g (500g) portions using Middleton Foods Muffin Mix

  • 1kg Dry Mix / 400ml Water / 300ml Oil / 2 Whole Grated Carrots / 2tsp Mixed Spice / 2 tsp Black Treacle
  • 500g Dry Mix / 200ml Water / 150ml Oil / 1 Whole Carrot / 1 tsp Mixed Spice / 1 tsp Black Treacle

Method for Plain Muffin Mix

  1. Weigh out mix into a mixing bowl and add grated carrot, mixed spice and black treacle to mixing bowl.
  2. Measure out water and oil and add 2/3 of liquid to mixing bowl and beat for 1 minute on slow speed.
  3. Scrape down and beat for 2 minutes on fast speed.
  4. Scrape down and beat for a further 1 minute on slow speed.
  5. Pour mix into a lined gastro tin and spread evenly.

Bake for 25 – 30 minutes at 175ºC in the Turbofan.  More black treacle can be added if required.

Cooking times and temperature may change depending on oven used.
